This is a gastronomic festival that has been celebrated continuously for 30 years and is organised by the O Castro neighbourhood association, in the parish of Mourente, in Pontevedra.
This Festa do Caldo (the Broth Festival) is always celebrated on the second Sunday of March, when large marquees are set up along with tables and chairs for the comfort of those who come to the festivity. The caldo or broth is served in a screen-printed cup and can be given out for free (all accredited pilgrims on the Camino de Santiago who pass through the festival are treated to a cup of broth).
At noon, the opening speech is read by a notable figure in the field of culture and a parade of invited gastronomic guilds takes place. Following the event there will be musical performances by folk groups from Galicia and Portugal and a visit to the monument dedicated to their caldo.
Every year, a silver pot is given to honour a person of the parish. The Orde do Caldo, which is made up of 140 guildmembers who promote and defend the local caldo wherever they go, and whoever wishes to do so may belong to this order.
The ingredients of our Galician broth are: quality water, beef, pork, such as salty ribs, cachucha , lacón (pig's shoulder), bacon, chorizo, chicken and pig's fat (essential to making a good broth).
The vegetables and pulses it contains are: turnip greens, local cabbage, floury potatoes and broad beans, all of which are also essential in the broth.
