Cuttlefish is the most noteworthy mollusc in San Simón. This cephalopod has a chalky internal shell, the cuttlebone, that gives rigidity to its body. Every year it comes into the bay to reproduce because of the abundant fields of eelgrass, on which the females lay their eggs.
