Description

    Partners since 2006, Luis Veira and Iria Espinosa take pride in having the best views of any restaurant in A Coruña. Their location on Monte de San Pedro, from where one can see the entire city and the vast Atlantic Ocean, backs up this claim. Their decision to move from the city centre to this panoramic spot has only brought them joy and a steady flow of customers throughout the year.

    The dining room, led by Santi Diéguez, is enclosed by a long window through which the minimalist wooden tables, bare of cloths, are arranged, adorned with handcrafted pieces of crockery, many sourced from the pottery of Buño.

    The omnipresent sea serves as both inspiration and pantry for these chefs, who have made Galician fish and seafood the cornerstone of their cuisine. Cockles, minchas, or bígaros, langoustines, bonito, and squid are just some of the products Veira mentions, praising their qualities regardless of their price. He also highlights the tasty sardine, much in demand during the popular San Xoán festival in A Coruña, when the beaches are filled with bonfires on a magical night.

    Although they do not yet have their own garden, being able to rely on producers from the Biosphere Reserve of the Mariñas Coruñesas allows them to focus on local produce, including some wines from the protected designation of origin of Betanzos.

    Both chefs believe that the secret to the evolution and success of their project lies in their work ethic and their daily presence overseeing the coordination of a team currently made up of around thirty people.

    Having reached ten years of experience, this restaurant is facing new challenges, such as the recent addition of Álvaro Gantes, who is in charge of the R&D department. Here, they track the latest international culinary trends to introduce new ideas to their repertoire of recipes, while also working on professional and public training initiatives and providing consultancy to other restaurants.

    In addition to the Semente, Raíces, and Árbore menus, diners can choose from a menu featuring dishes such as merluza from Celeiro, fillet steak with rice, Galician beef steak tartare, or cod cocochas. A dish that always appears in any restaurant offering, now a house classic, is La cereza que cayó del árbol (The cherry that fell from the tree), a trompe-l'œil dessert where a fruit heart in jelly is covered by a foie mousse resting on a bed of basil sand.
